Day 1 and 2 of 90 Day Challenge

Yesterday I  posted in fb that I am starting a new 90 day challenge. I will post what I did each day and what meal I replaced with visalus. Most of my meals being replaced will be visalus since I love it in my oatmeal.

Day 1 - I had my vi oatmeal. It was sooo good. Then I decided to do complete my workout. I chose to do Zumba Exhilarate  After volunteering at Avari's swim meet my legs were very tired but I managed to pull through and sweat a lot.

Day 2 - Today I ate my vi oatmeal for breakfast. After we came home from church and ate lunch I rested for a while. Then I dragged myself downstairs and did a new workout I found on pinterest. It was a cross fit workout. You complete 6 sets (run 1/2 mile, do 10 push ups, 20 squats, 30 sit ups). It definitely pushed me but I was glad I did it! Now I'm ready for day 3!!

The beginning - Panera Bread Broccoli Cheese Soup

Life has been very busy since we moved to Colorado. We have definitely enjoyed living near the mountains. We have become more active and have changed how we eat. I'm excited to begin sharing all the things we do along with recipes that my family enjoys.
First I will begin with sharing a few hikes we've gone on. We've hiked many beautiful trails but our favorites are the  two 14ers we've done. We hiked Greys Peak and Mt. Bierstadt. They were long hikes but we enjoyed the time at the top together! What a blast! Our kids who are Avari (8) and Keegan (6) did an amazing job!
Since then we've been buying gear for hiking in the snow! Bring on winter! I've been trying to cook new recipes finding lots of ideas off of pinterest. I love that website/app!
Tonight I cooked Panera Bread's Broccoli cheese soup! I of course made some changes to make it lower fat and my family loved it! Here's the recipe with my modifications:

Panera Bread Broccoli Cheese Soup ( with my changes )

Pam Spray
1/2 Medium Yellow Onion, diced
2 tbsp butter (country crock light)
1/4 c unbleached enriched flour
2 c fat free half and half
2 c chicken stock ( I used bullion powder and water)
1 bag steam fresh broccoli (12 oz)
1 carrot, julienned
1/4 tsp nutmeg
8 oz 2% reduced fat cheddar cheese, block (I grated it)

Directions:
1. Saute onion in pot with pam spray.
2. Melt butter. Then add the flour and whisk together. Then I added a little stock. Pour into half and half and simmer for 3-5 min. Stir constantly so it doesn't clump and stick. ( I poured liquid in pot with onions)
3. Add the chicken stock and simmer for about 20 min stirring once on a while so the mixture doesn't clump or stick.
4. Add broccoli and carrots. Cook on low until vegetables are cooked to your liking. I cooked about 10 min. It's suggested to simmer for 20-25 min.
5. You can puree in a blender but we liked the vegetables chunky. Reduce heat and add cheese. Stir in nutmeg. After cheese is melted you can serve.
